Known for their unique blend of Thai and Japanese cuisine, Teton Kitchen in Depew, New York continues to thrive during the current COVID pandemic. Teton inarguably has one of the largest varieties of traditional Japanese sushi in the Buffalo area, blended in a diverse menu featuring traditional Thai dishes and fusion creations sure to leave one satisfied.

The Simple Style Maki at Teton is everything one should expect of good sushi: fluffy, flavorful, and neat. Simple maki include avocado, cucumber, asparagus, tuna, salmon, and yellowtail with scallion. There are also the California roll with crab meat, cucumber, avocado, and motoyaki sauce, the vegetable roll with asparagus, bean sprouts, cucumber, carrot, and avocado, and the eel roll with eel, cucumber, avocado, and sweet sauce.

For spicy, simple maki, there is the spicy salmon roll with cucumber, avocado, and motoyaki, the spicy yellowtail roll with yellowtail, scallions, cucumber, avocado, and sriracha, the spicy shrimp roll with shrimp, avocado, and cucumber, and the spicy tuna with tuna, avocado, and cucumber. The smoked salmon and cream cheese roll comes with cucumber, smoked salmon, and cream cheese as a good cool down roll.

The Fusion Style Maki at Teton is really where one can explore the full length of their flavor pallet. The Anaconda comes with tuna, salmon, avocado, bean sprouts, cucumber, and spicy sauce, while the Godzilla comes with steamed shrimp, tuna, scallions, avocado, and cream cheese. The Red Rock features tuna, asparagus, avocado, mango, and fish eggs.

A hometown favorite, the Buffalo Bills, comes with smoked salmon, avocado, bean sprouts, soy sauce, and scallions with sliced beef on top. The T-Rex Lover features soy sauce, beef, crispy chicken, scallions, cucumber, avocado, and red garlic sauce, while the Hulk comes with crab meat salad, shrimp tempura, avocado, and crunchy apple.

Teton also offers fried rolls and the baked, Volcano roll, with baked seaweed, white fish, crab meat, cream cheese, asparagus, and spicy sauce. The fried rolls include the Las Vegas roll with fresh salmon, crab meat, kimchi, cream cheese tempura, and eel sauce, and the Moment of Happiness, featuring tuna, asparagus, cream cheese, jalepeno tempura, and chef’s special sauce.

The special style makis at Teton are a creative deluge of flavors for virtually any pallet. The spicy tuna, salmon, and shrimp hand rolls all come with their respective proteins, cucumber, avocado, bean sprouts, and fish egg. The Surf Roll features eel and avocado with a spicy tuna topper, while the Taxi In New York comes with tuna, cream cheese, jalepeno, and avocado wrapped in soy paper.

The Teton Sky features tuna, lettuce, deep fried chicken, avocado, tomato, and spicy mayo in rice paper, while the Snow White comes with crab meat, crunchy apple, cream cheese, and spicy tuna on top. The Soft-Shell Crab Roll features deep fried soft-shell crab, avocado, and cucumber, while the Caterpillar Roll comes with eel, cucumber, eel sauce, and avocado on top.

The shrimp roll variety at Teton is unrivaled. The shrimp tempura roll features shrimp tempura, avocado, cucumber, and eel sauce, while the crunchy shrimp tempura roll comes with shrimp, avocado, cucumber, and crab meat and crunchy onion on top. The Mango Shrimp Roll comes with shrimp tempura, avocado, cucumber, and crab meat and mango on top, while the Perfect Storm features shrimp tempura, avocado, cucumber, and hot chili and spicy tuna on top.

The Happy Together Roll comes with shrimp tempura, avocado, cucumber, and crab meat and corn flake on top, while the Black Dragon Roll features crab meat inside and eel on top with sweet yum sauce. The Kiss of the Spider Woman features deep fried soft-shell crab, crab meat, avocado, cucumber, and eel sauce, while the Beach Roll comes with spicy tuna, tempura shrimp, avocado, and cucumber.

The Hello Roll at Teton comes with yellowtail, scallion, spicy mayo, and is topped with massago, while the Hurricane features salmon, spicy mayo, avocado, spicy tuna, and mango. The Philadelphia Eagle features smoked salmon and bean sprouts, and is topped with crab meat and eel sauce, while the Rainbow Roll comes with spicy tuna inside and tuna, salmon, shrimp, and yellowtail on top.

Another local favorite, the Niagara In Town, comes with spicy salmon, avocado, and cucumber, and is topped with fresh salmon and crunchy strips. The zing of the spice comes together with the salty goodness of the crunch and fresh salmon like no other roll could.

Sashimi comes a la carte in either nigiri or sashimi options. Sashimi rolls include, the crab stick, shrimp, egg omelet, tuna, salmon, eel, white tuna, smoked salmon, mackerel, white fish, spicy scallop with fish eggs, salmon roe, smelt roe, yellowtail, squid, and fatty tuna.

There are a number of sushi, sashimi, and maki combinations available at Teton. The seven-piece sushi and tuna roll combination comes with salmon, shrimp, eel, mackerel, yellowtail, fluke, and of course tuna sushi. The Tuna Lover comes with three pieces of tuna sushi, three tuna sashimi, and a spicy tuna roll.

Similar “lover” combinations include the Salmon Lover with three pieces of salmon sushi, three salmon sashimi, and a spicy salmon roll, as well as the Yellowtail Lover, which includes three pieces of yellowtail sushi, three yellowtail sashimi, and a spicy yellowtail roll.

The seven pieces sushi and seven pieces sashimi combo comes with tuna, salmon, shrimp, mackerel, yellowtail, and salmon roe, or for those ready to tackle a large amount of sushi in one sitting, Teton also offers Love Sushi Boats for two and four diners respectively.

The Summer Roll with shrimp, rice noodle, cilantro, tomato, lettuce, cucumber, and carrot comes in rice paper, while box sushi is also available in the Layer Cake, which comes with rice, spicy tuna, salmon, and avocado, topped with mango in the layered style.

Sushi lunch specials at Teton are a must as well. The Sushi Combo Lunch features five pieces of nigiri sushi with a California roll, while the Sushi and Sashimi Combo Lunch comes with three pieces of sashimi, sushi, and a spicy tuna roll. The Two Roll Combo and Special Two Roll Combo each come with miso soup and offer a deep delve into what can only be described as sushi heaven.
