Casa Bonita, a legendary Colorado restaurant that captured the hearts of many, is reopening soon. It originally opened in 1974, and closed in 2020 due to the pandemic.
Memories of Casa Bonita included a huge pink outdoor castle, a space with vibrant colors, strolling mariachi bands, and mesmerizing cliff divers plunging into a large indoor waterfall. The restaurant, designed to resemble a Mexican hacienda, was complete with courtyards, balconies, and even a pirate's cove. Each corner filled with unique finds, allowing guests to explore and discover new surprises.
Alongside cliff divers, guests would enjoy live stage shows featuring comedic sketches, traditional Mexican dances, and puppet performances. There were also arcade games, a blacklight maze, and even a small gift shop to complete the experience.
Casa Bonita‘s menu featured a wide range of Mexican dishes, including sizzling fajitas, enchiladas, tacos, and their famous all-you-can-eat sopapillas. The food may not be top notch cuisine, but the environment more than made up for it.
Casa Bonita's popularity also stemmed off a South Park episode where the characters visited the special establishment.
The dining experience was so badly missed that a “Save Casa Bonita” website and GoFundMe page was created, raising almost $69,000. Luckily, in November 2021, the restaurant announced it would be reopening through new owners Matt Stone and Trey Parker, the creators of “South Park”.
What’s new at Casa Bonita?
Axios Denver visited the soon-to-open restaurant and said, “If Meow Wolf and Mexico had a baby, it would look a lot like this”.
- One of the most monumental improvements to the restaurant was building out a "real" kitchen, where patrons can watch tortillas be made by hand. Before the renovation, the food was made with steamers and a heat lamp "if you're lucky," staff told them.
- The cliff divers are also seriously impressive. We were wowed with plenty of daredevil-y stunts, like synchronized swan dives and double backflips into what appeared to be a pristine pool.
Although an exact date has not yet been announced, Casa Bonita will be opened to limited dining exclusively for individuals on their email list, where you can sign up here.
