Blueberry Lemon Chia Seed Pudding

🫐 Blueberry Lemon 🍋 Chia Seed Pudding is so refreshing and easy to prep for a quick breakfast during the week! For 2 Servings: •1 cup milk of choice ( I used @elmhurst1925 milked walnuts) •3-4 Tbsp Chia Seeds •1 tsp vanilla extract •2 Tbsp freshly squeezed lemon juice •1/2 cup mashed blueberries, more for topping •honey or sweetener of choice In 1 cup of milk, add chia seeds, vanilla extract, lemon juice, and mashed blueberries. Mix and set aside for about 3 minutes. In 2 containers with a lid, add 2 tablespoons of old fashioned oats on the bottom of each. Stir the chia seed pudding mix again and divide it in half. One half in one container and the other half in the other. Cover both containers with the lids and refrigerate overnight.
