On Feb 12, 2022, Madison Beach Hotel’s Epicurean Series brought together culinary greats to enjoy a five-course dinner prepared by celebrity culinarian Chef Plum. A graduate of The Culinary Institute of America and currently the host of Seasoned on WNPR, Restaurant Road Trip on PBS, and Edible Magazine's "On the Road," Chef Plum is a multi-time Food Network winner.
In attendance among the sixty dining guests was culinary luminary Jacques Pépin, world renowned as the host of his acclaimed and popular cooking programs on public television, and as a prolific author, respected instructor, and gifted artist. A resident of Madison, Conn., Chef Pépin is the author of the acclaimed La Technique and La Methode, two books that present the principles of culinary technique and artistry and earned him a place in the James Beard Foundation's Cookbook Hall of Fame, an honor bestowed each year on an author whose contributions to food literature have had a substantial and enduring impact on the American kitchen.
Joining him at Madison Beach Hotel was Claudine Pépin, the only daughter of Jacques Pépin and co-founder of the Jacques Pépin Foundation. Claudine has prepared meals and shared cooking techniques with her father, on “Jacques Pepin’s Kitchen: Cooking With Claudine” and “Jacques Pepin’s Kitchen: Encore With Claudine.” All of their public television shows received the notable James Beard Award.
Rollie Wesen, EdD, CEC, co-founder, and Executive Director of the Jacques Pépin Foundation, was also in attendance for the hotel’s epicurean event. Wesen is a culinary instructor and Associate Professor at Johnson & Wales University in Providence, RI, and the husband of Claudine Pépin.
The evening featured the five-course dinner event, each paired with wine. It began with a welcome reception by a bonfire on the beach followed by dinner inside overlooking the Long Island Sound, concluding with an exquisite dessert.

Tickets are now available for the next in the Epicurean Series, Saturday, April 9. This exclusive dinner event will feature Madison Beach Hotel’s own culinarian Chef Mo Jalil.
Classically trained at the Notre Dame Culinary School in Jerusalem and the Cordon Bleu in France, Chef Mo Jalil has been honing his craft for nearly forty years. His creative fusion of international cuisines is the result of a career that spans Asian, Europe, Africa, and the United States.
From the Five-Star American Colony Hotel in Jerusalem to the Maxwell House in New York, to the Connecticut Shoreline, Chef Mo has worked and trained with the best. Before joining the Madison Beach Hotel as Banquet Chef, he served as Executive Production Chef for a leading Connecticut-based catering company. Chef Mo’s cuisine is recognized not only for flavor, but also for creative presentation.
