Bacon Wrapped Chicken Lollipops
Bacon wrapped chicken lollipops. First you want to prepare your chicken drumsticks and that requires pulling the skin off and cutting the knuckle meat off and trimming away the tendons. Push the meat down on the bone making the meat more plump and hit it with your favorite SPG or just simple salt and pepper and then wrap with bacon and stand up on a wire rack and place on your preheated grill at 350 degrees F. Cook your chicken until the internal temp reaches a minimum of 165 degrees internal but don't be afraid to push it to 185 degrees internal, your chicken will still be very juicy with that bacon wrapped around the lollipops. This is when you decide if you want to add a sauce, give it 10-15 minutes to set and pull your chicken lollipops and let rest for 10-20 minutes. Squash is an easy side that you cut into 2 inch pucks with some slices of onion and oil and season for a veggie basket and add to your grill. I added some bacon chunks to mine and cook at 350 for about 45 minutes
