Apple and cinnamon griddle cakes
Today, I will be preparing a recipe that's quite simple to prepare, extremely delicious, and about as American as a homemade apple pie. Need I say more? These apple griddle cakes can be served for breakfast, but I like preparing them as an evening dessert because, in my opinion, they taste very similar to a homemade apple cobbler. Especially when they're topped with frozen vanilla yogurt, whipped cream, or vanilla ice cream.
Ingredients:
- 2 cups of canned, diced apples, or use 2 large apples peeled, cored, and diced, or use apple pie filling with no sugar added.
- 1 egg
- 3 tablespoons of Splenda or regular sugar
- 1 tablespoon of Splenda brown sugar blend or regular brown sugar
- 2 teaspoons of ground cinnamon
- 1 teaspoon of pure vanilla extract
- 1-1/2 cups of Bisquick mix
- 1/2 cup of milk
- Cooking spray to spritz on the griddle
Instructions:
In a medium-sized bowl, add 1 egg and 3 tablespoons of Splenda or regular sugar, 1 tablespoon of Splenda brown sugar blend or regular brown sugar, and 2 teaspoons of ground cinnamon together until the egg mixture becomes frothy and creamy. Then add 1 teaspoon of pure vanilla extract, 1-1/2 cups of Bisquick mix, and 1/2 cup of milk, and combine well. Then fold in the canned apples.
Now, preheat the griddle on medium heat. Once your griddle comes to temperature, spritz a small amount of cooking spray over it.
Using a large spoon, transfer the apple batter to your hot griddle. Cook each griddle cake for about 2 to 4 minutes (depending on how brown you prefer yours). Flip the griddle cakes once the bottom sides are done.
Serve your apple griddle cakes with syrup, plain Greek yogurt, frozen vanilla yogurt, whipped cream, or vanilla ice cream as a sweet and yummy treat, and enjoy!
Note:
If you don't own a griddle, you can use a skillet to make apple pancakes.
