Stuffed baby bella mushrooms
If you love mushrooms as much as I do, then hopefully you'll enjoy my stuffed baby bella mushrooms. Stuffed baby bellas have a satisfying savory flavor and even when the mushrooms aren't stuffed, they still have a satisfying, delicious, meaty flavor when cooked. Today, I prepared the stuffing with a combination of diced onion, diced pepperoni, shredded Swiss and cheddar cheese. The pepperoni can be substituted with bacon bits, diced ham, diced crab meat, baby shrimp, shredded chicken, spinach and cheese, etc..
Mushrooms contain eighteen essential vitamins and minerals. Plus, they contain a fair amount of potassium. Just one baby bella mushroom has seventy-six milligrams of potassium.
Five raw baby bella mushrooms equals one serving size. However, the amount per serving size is lowered when the mushrooms are stuffed.
In my recipe, I use five baby bella mushrooms, two teaspoons of finely diced onion, ten slices of pepperoni, and a fourth of a cup of mixed shredded cheese. (Double or triple the recipe if needed.)
Ingredients:
- 5 baby bella mushrooms
- 2 tablespoons of finely diced onions
- 10 pieces of pepperoni, diced very finely
- Mixed shredded Swiss and shredded cheddar cheese, to be placed on top of the mushrooms (I used about ¼ cup of the two cheeses combined)
Instructions:
First, clean your mushrooms either by rinsing and scrubbing them. Then carefully pull the stems out of the centers. (Save the stems to eat as a late evening snack later.)
Now, finely dice your onion and pepperoni and combine. Poke and press as much of the mixture inside each mushroom as you can.
Place your stuffed mushrooms inside an oven-safe dish that has raised sides.
Next, add as much cheese on the top of each stuffed mushroom. (I poke and press the cheeses inside as much as possible.)
Transfer your stuffed baby bella mushrooms to a 450 degrees F oven and bake for about ten to fifteen minutes, or until the cheese is melted.
Serve and enjoy!
Note:
There are twenty calories in five raw baby bella mushrooms, two hundred and fifty-six calories in ten slices of pepperoni, eight calories in two tablespoons of finely diced onion, and about one hundred and ten calories in the mixed shredded cheese. So, there are three hundred and eighty-four calories in the five stuffed mushrooms altogether.
If I had added pasta sauce, etc. to the mushrooms, of course, the calorie count would be higher.
I don't add any seasoning to my stuffed mushrooms because I enjoy the natural savory flavor of the mushrooms.
