My dad's famous waffles are rolling onto the scene!

I've introduced you to his famous waffle cream sauce in various forms when we ate the eggnog gluten free vegan waffles and paleo waffles with pumpkin spice cream sauce.

But, I realized I had never shared with you his super simple waffle recipe and man, oh man, is it GOOD.

Sorry folks, these aren't some healthy greek yogurt waffles but sometimes, you gotta LIVE!

Ingredients Needed

Like I mentioned, my dad used to make these all the time when I was a kid. Sometimes the best recipes are the ones that are SIMPLE and quick to put together! This dairy free waffle mix is super easy and will please the whole family- here’s what you’ll need:

  • White Vinegar
  • Unsweetened Almond Milk
  • All purpose or Gluten Free 1:1 Flour
  • Baking Powder
  • Baking Soda
  • Eggs
  • Salt
  • Avocado Oil

How to make Dairy Free Waffles

Prepare

Pour the vinegar in a large liquid measuring cup and pour in the almond milk. Let this stand for a little while- you’ll see the milk start to curdle.

Mix

In a large bowl, add the flour, baking soda, baking powder and salt. Use a wire whisk to mix everything together thoroughly. Add in the rest of the ingredients, including the milk, and whisk until smooth.

Heat

Preheat your oven to 200 degrees Fahrenheit and turn on the waffle maker, spraying it with cooking spray.

Cook

Pour a bit of the batter in the center of your waffle maker and close the lid. Cook until the waffles are golden brown and crispy on the outside! Keep finished waffles in the preheated oven on a pan until all the waffles are cooked.

Serve

Top the waffles with your favorite toppings and DEVOUR!

How to keep Waffles Crispy

If you’re cooking up a batch of waffles for your family and friends, but want them all to stay crispy after they’re cooked, you’re in luck! Simply place a wire cooling rack on top of a cookie sheet and slide it into your oven. After each waffle is done cooking, place it on the rack in a single layer. This will keep them all warm and crispy so that you can enjoy them together!

What to put on Waffles

Ok, so when it comes to waffles and pancakes, the topping options are ENDLESS! These waffles would be incredibly delicious with a big dollop of fresh whipped cream or coconut whipped cream if you need it to be dairy free! I recommend topping them with roasted peaches from my buckwheat pancakes recipe or some cherries and hazelnuts from my gluten free pancakes. Fresh berries are always a good idea too- I would suggest strawberries, blueberries and raspberries to bring some freshness to these waffles! Have fun with your toppings and enjoy!

How to freeze Waffles

These waffles freeze really well! I recommend storing them in a freezer style zip lock bag, making sure to squeeze out all excess air. They last up to 2 months this way!

What is the difference between Pancake and Waffle mix?

Although pancake and waffle batters are very similar, there are some key differences. Waffle batter tends to contain a bit more fat, which helps crisp up those waffles. Waffle batter usually has a thicker consistency than pancakes, as well.

What is the BEST waffle maker?

I prefer a waffle maker that makes classic thin waffles, but a belgian waffle maker will work for this recipe too. Keep in mind, though, that using a larger waffle iron will result in less waffles.

What is a good substitute for Almond milk in waffles?

If you don’t have almond milk or prefer to use another type of milk, feel free. Any milk should work great for this waffle recipe.

INGREDIENTS

  • ▢1 Tbsp White vinegar
  • ▢1 Cup Unsweetened almond milk
  • ▢1 Cup All purpose or gluten free 1:1 flour (140g)
  • ▢1/2 Tbsp Baking powder
  • ▢1/2 tsp Baking soda
  • ▢1/2 tsp Salt
  • ▢2 Large eggs
  • ▢1/2 Cup Avocado oil *Read notes

INSTRUCTIONS

  • Pour the vinegar into a measuring cup and fill with the almond milk for 1 cup. let stand 5 minutes. You will see the milk curdle.
  • In a large bowl, whisk the flour, baking powder, baking soda and salt.
  • Add in all the remaining ingredients (including the milk) and whisk until smooth and combined.
  • Spray your waffle maker with spray and heat your oven to 200 degrees (if you want to keep the waffles warm while cooking.)
  • Pour 1/3 cup of the batter into the center of the waffle maker and cook until golden brown and crispy. My waffle maker cooks in short cycles and I had to do 3-4 cycles at the highest setting to keep them super crispy.
  • DEVOUR with your favorite toppings!
