If you don’t mind not staying downtown, check out Swan and Dolphin. We stay there when we go. Owned by Marriott, but super close to Epcot and Hollywood Studios. Walking distance to Disney Boardwalk, plus tons of restaurants in the resort itself. Huge pool area as well. Also, everyone I encountered during my stay (from valet to front desk to restaurants and shops) was polite, professional, and helpful.
I bet you'll like Margaritaville. It has a resort building with rooms or cottages you can rent, and they were all built in the last few years. There are restaurants on site, you have access to an entire exclusive waterpark, and some of the cottages have their own private hot tubs. They do have a fitness center and spa in the main hotel.
Hilton and Waldorf? They were purpose built as luxury vacation hotels. No free breakfast, but they do have a paid breakfast buffet, fitness center, spa, huge pool complex, minigolf, regular golf, and stuff to do at the pools during the day.
I had an great experience in the Grove Resort, the team was polite and helpful and eagered 2 assist. Room was spacious and clean, great views, big hot tub, amazing water park and more!
