For art, there's OMA, Mennello, Rollins' CFAM, the Maitland Art Center complex, plus several smaller galleries like downtown's CityArts. For science and tech, there's Orlando Science Center. For history, there's the Orange County Regional History Center and the Morse Museum (also technically art, but it's historical art, so ...). Plus, there are touristy museums like Madam Tussaud's and Ripley's on I-Drive.
Orlando Fire Museum is pretty nice and there are picnic tables nearby for a picnic. I really enjoyed it there, and the old retired firefighters who run them place have some great stories. It is located in Orlando's Loch Haven Cultural Park. But you have better call ahead before coming to ensure operational hours.
The Chocolate Museum & Cafe is great! I kind of accidentally stumbled upon it, but it ended up being really cute and informative; plus you got to sample delicious chocolates and they had an optional upgrade to do a wine & chocolate pairing that I definitely recommend. They even have some solid chocolate sculptures of some of the world’s most recognizable landmarks which are really impressive.
The Orlando Museum of Art used to do first Thursday. It would be a different theme for local artist to display their works and you get access to the rest of the museum and they have food and drinks. It was a really fun date night thing.
