Owner and Chef Josh Buckwald did not grow up wanting to be a Chef. Originally from New York, he went to acting school. He moved to LA and worked in the entrainment industry and realized, it is not what he wanted to do. Then, while searching for the meaning of life he cooked. He cooked a lot. Eight hours a day a lot. His then girlfriend, Alison, (now wife), pointed out that it was obvious what he should be doing. Cooking allowed him to still be a creative, while doing something he loved. He started working in kitchens around Los Angeles and learned everything he could to master what he loved to do.
Over the years he has worked at several very high-end restaurants. He learned everything he could about cooking and running a restaurant. He wanted to own his own restaurant someday. Then the world changed. 2020 brought a wave of unemployment and despair. He is now out of work and had time on his hands. He could not do a lot, but he wanted to help bring some anxiety relief and comfort. So, he started making pasta in his home kitchen for his friends and family. He found that the work in the kitchen helped bring him relief as well. He also found that his friends and family were really loving his food. So, he got a website and started delivering. He got so busy he hired a friend. Then another friend. He started popping up at farmers markets in Orange County and LA. Now, his kitchen is based out of the Employees Only LA in West Hollywood. He also has a booth at their weekly night market. He's able to make large quantities of pasta and sauce for people like you and me at a reasonable price delivered to my door.
So, what is his product? Its handmade pasta and sauces from scratch. Josh calls it “elevated comfort food”. I call it love in a bowl. Once made, its then flash frozen and delivered to you. He also sells at the West Hollywood Night Market. Once delivered, you can make it the same day or keep it in the freezer until you are ready to cook. They are packaged as 2 servings and come with very easy and clear cooking directions. Most importantly. It is delicious.
I was able to try the Tagliatelle with Bolognese and the Cavatelli (Vegan) with the Mushroom Ragu. Both had so much flavor. I would have never known that the pasta was once frozen. The tagliatelle had that perfect toothsome chew that you would get when dining in a restaurant. Protip: There's a good amount of sauce, order extra tagliatelle. You will not regret it. I just had it a week ago and I am already craving that Bolognese again! So, check out his website.
