When I worked in the downtown Honolulu area for several years, I used to eat at lunch wagons almost every day. I rarely eat at lunch wagons anymore. However, I was in the Costco area in Waipio early Saturday morning; I noticed a food truck, Lee’s Breakfast Lunch Wagon.
I had never tried their food truck, so I picked up a scrambled egg plate with link sausage and a Diet Pepsi. For $11, they gave a large portion of rice, one scrambled egg, and six link sausages. The amount of rice was so large I took the rest home and made fried rice with the part I didn’t eat for breakfast.
For the price of the plate and the amount of food, it was a good deal. I also liked their location. It was easy to access, with plenty of parking at Costco or street parking.
With the many lunch wagons around the islands, Lee’s Breakfast Lunch Wagon serves breakfast and lunch comfort foods.
They’re open from 6:00 am - 10:00 am, Monday - Saturday, and closed on Sunday. I checked online, and they had other lunch wagons around the island. I also found their Instagram account. Here are their other locations:

Conclusion
The owners of lunch wagons always serve good comfort foods. Lee's Lunch Wagon was the same also. Their Instagram account says they've been serving the island since 1997. The next time I'm in the area, I'll need to try their steak and eggs on rice. Try something from their menu if you're in the area from early morning to mid-morning.
