Here's a simple and delicious vegan carrot cake recipe for you:

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1/4 cup non-dairy milk (such as almond or soy milk)
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans

For the cream cheese frosting:

  • 1/2 cup butter, softened
  • 8 ounces of cream cheese, softened (feel free to use regular)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, combine the grated carrots, vegetable oil, applesauce, non-dairy milk, maple syrup or agave nectar, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
  5. If using, fold in the chopped walnuts or pecans.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
