Here's a simple and delicious vegan carrot cake recipe for you:
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/4 cup non-dairy milk (such as almond or soy milk)
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans
For the cream cheese frosting:
- 1/2 cup butter, softened
- 8 ounces of cream cheese, softened (feel free to use regular)
- 4 cups powdered sugar

Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine the grated carrots, vegetable oil, applesauce, non-dairy milk, maple syrup or agave nectar, and vanilla extract. Mix well.
