Healthy Pancake Recipe that Won’t Leave You Regretful After

A couple of years ago I saw a Facebook video of a dude mashing a banana in a bowl. He then added eggs and oats to create what he called “healthy pancakes”.

“Three ingredients…that’s it?”

Being an athlete who is constantly searching for healthy alternatives to my favorite not-so-healthy treats, I was intrigued. It certainly lived up to the hype too. All I needed was a banana, 2 eggs, and oats. That was it — the video did not lie.

While they tasted a bit different than traditional pancakes, they were 10x healthier and left me feeling full, satisfied, and not regretful after.

After a couple of attempts, I’ve perfected the recipe. I added a couple of ingredients to up the flavor and make it a bit more protein-dense. The recipe is quick, simple, and a great way to start the day. Here’s how to make them…

Actual photo of the pancakes I made using this recipe.

  • 2 eggs
  • 1 large banana
  • 1/4 cup oats
  • Handful of almonds
  • 1 scoop of protein powder of choice (the recipe still works without, add another 1/4 cup oats if you do not add protein powder)
  • Dash of Cinnamon (not required)
  • Dash of vanilla extract (not required)

  1. Put the eggs, banana, oats & almonds in a blender. Blend until thick with no chunks. (Pro Tip: The magic bullet works wonders for this recipe.)
  2. Pour into a large bowl.
  3. Add protein powder, cinnamon, and vanilla extract.
  4. Mix well until thick like pancake batter. (Pro-tip: If the batter seems runny/watery you can add a little more blended oats/almonds to thicken it up.)
  5. Heat a large pan over medium heat and add a dash of coconut oil (any type of cooking spray works as well).
  6. Place 1/4 cup batter into the pan and cook for about 1.5 minutes. Then flip to the other side and cook for 1 minute or until golden brown.
  7. Serve with a spoonful of nut butter on top (optional) & your favorite fruit! I prefer blueberries or strawberries.

*If you don’t have a blender you can mash the banana with a fork and then manually mix in the remaining ingredients.*

I really love this recipe. It’s quick, easy, and a healthy alternative to pancakes. And most importantly, these don’t leave me regretting my decision afterward!
