Jerk chicken is a traditional Jamaican dish that dates back to the 17th century. It was created by the Maroons, escaped African slaves who lived in the mountains and fought against the British colonialists. They used a mix of spices, herbs and peppers to season and preserve the meat, and cooked it over a fire made from pimento wood. The word "jerk" comes from the Spanish word "charqui", which means dried meat.

- 2 teaspoons of ground allspice

- 1 teaspoon of ground nutmeg

- 1 teaspoon of ground cinnamon

- 1/4 cup of apple cider vinegar

- 2 tablespoons of brown sugar

- Salt and pepper to taste

To make the jerk chicken wings, follow these steps:

1. Preheat your oven to 375°F and line a baking sheet with foil.

2. Cut the chicken wings into drumettes and flats, and pat them dry with paper towels.

3. In a small bowl, whisk together the jerk seasoning and the oil.

4. Rub the seasoning all over the chicken wings, making sure to coat them well.

5. Arrange the chicken wings on the prepared baking sheet in a single layer.

6. Bake for 45 minutes, turning them halfway through, until they are golden and cooked through.

7. Enjoy your jerk chicken wings with some rice and beans, coleslaw or salad.
