Troy Guard's TAG Burger Bar and Big Wave Taco to close this month

This week, Denver will say goodbye to two of restauranteur Troy Guard's concepts — TAG Burger Bar, which has been in Congress Park for over a decade, and Blue Wave Taco, one of the founding stalls at Junction Food and Drink.

Guard told Westword, "We were up for a new lease and the new numbers weren't where I wanted them to be...That's part of the reason. Another reason was staffing. Another reason was, with COVID turning all our worlds upside down, we're just looking to focus on doing different things right now."

With Guard's recent opening of Greenwood Village food hall Grange Hall, he's got plenty to focus on.

While the loss of these two restaurants will undoubtedly be disappointing to many, let's not forget that Guard has recently opened concepts that include Tiny Giant (sushi, Milepost Zero), Rado Burger (Grange Hall), and Crazy Love Pizza (Grange Hall), along with standalone restaurants Bubu, Los Chingones, Guard and Grace, HashTAG, and FNG, which recently reopened with an updated menu.

As one of the founding and best food stalls at Junction Food and Drink, Blue Wave Taco was most affected by the hall's delayed opening due to COVID. It opened last October and missed out on the whole summer. Guard said, "...We tried it for twelve months; it wasn't a lot of money we put into it, but it just wasn't worth our time to break even over there. While it's a bummer, at least we tried."

Although Denver will be losing a Congress Park staple and one of the biggest names inside one of the city's newest and best food halls, there's no doubt that Guard's concepts will continue to be a significant part of the Denver food scene. He plans on expanding his existing standalone restaurants and continuing to experiment with new concepts in the future.
