Coconut Macaroons to Cure Your Sweet Tooth Cravings
With the New Year, we tend to focus on mindful eating. For me, one of the best ways to kickstart healthy eating habits is to focus on incorporating more whole foods into my diet. Eating fresh fruits, vegetables, whole grains, lean proteins, and healthy fats. However, my one downfall is always sweets! Satisfying your sweet tooth cravings can be a challenge, especially when you are trying to maintain a healthy diet. Here is a simple, yet delicious dessert to satisfy that sweet tooth. Coconut macaroons!
Coconut macaroons are delightful. They are chewy, sweet, and easy to make. While coconut macaroons are undeniably delicious, it's important to consider the nutritional aspects of this sweet treat. Coconut macaroons are generally high in saturated fat and sugar, so it's best to consume them in moderation. However, they also offer some nutritional benefits due to their main ingredient, coconut.
Coconut is high in healthy fats, particularly medium-chain triglycerides (MCTs), which have been linked to several health benefits, including improved heart health and increased levels of good HDL cholesterol. Additionally, coconut contains fiber, iron, and other essential nutrients.
Without further ado, here is the easy-peasy recipe:
Ingredients:
- 3 cups shredded coconut
- 1/2 cup granulated sugar
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine the shredded coconut, granulated sugar, vanilla extract, almond extract, and a pinch of salt. Mix well until all the ingredients are combined.
3. In a separate bowl, beat the egg whites until they form stiff peaks.
4. Gently fold the beaten egg whites into the coconut mixture. Be careful not to deflate the egg whites too much.
5. Using a spoon or a cookie scoop, portion out the coconut mixture onto the prepared baking sheet. You can shape the macaroons into small mounds.
6. Bake the macaroons for 15-20 minutes, or until the tops are golden brown.
7. Once the macaroons are done baking, allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Store any leftovers in an airtight container at room temperature for up to a week. Enjoy your coconut macaroons!
