Ingredients:
1 cup sugar
1/2 cup butter or margarine
1 1/3 cup flaked coconut
2 eggs
1 1/2 cup flour
3 tsp baking powder
1 tsp. cinnamon
3/4 tsp salt
1/2 tsp nutmeg

Creamed Peas and Tuna Over Toast may be a familiar recipe, or it may not be. It may sounds a bit strange to some, and will be very familiar to others.... but I grew up with this and loved it! St. Patrick's Day is just about here!  If you're looking for something different than corned beef, try this on for size!  I will show you how to make an inside out Shepherd pie for your holiday. (We eat this year-round though because it's so good and easy to throw together).  Here's what  you'll need for a  13 x 9 pan:

Ingredients:

2 lb. ground beef
2-3 TBL Worcestershire sauce
1- 1 1/2 TBL Beef Bullion
1 TBL ground Rosemary
1 tsp. Thyme
1 tsp. coarse black pepper
1- 1 1/2 cups ketchup
1 1/2 cups water
3 cups vegetable mix (I prefer frozen, but you can do whatever mix you prefer)
6 medium- sized baking potatoes
1 cup milk, cream or half and half
1/2 cup butter
1/4 cup dried parsley (optional)

Inside-Out Shepherd’s Pie - A St. Patrick's Day Recipe! 

Today I am going to show you how to make Haupia! This is a very popular Hawaiian coconut dessert that can be served as a traditional pudding or more of a gelatin-type finger food.  You'll even see this in pies and malasadas (think of a filled doughnut made by the angels).  It's super simple to make, and only 3 ingredients (4 if you count the water -haha)! Here's what you'll need:

Ingredients:
1 can unsweetened coconut milk
1/4 cup of granulated sugar (add more if you like it sweeter)
1/2 cup water
5 TBL Cornstarch (or whatever thickener you prefer)

How to Make Haupia - Hawaiian Coconut Pudding Dessert

This is a beautiful new way to dish up meat and potatoes for dinner. Despite what it it looks like, it really doesn't take all that long to make. Feel free to change up the sauces too and you'll have endless varieties.

Ingredients:
Meatballs (or recipe below)*
4 medium-sized potatoes
5 TBL butter
4 TBL flour
4 cups whole milk
1 tsp garlic salt
1 dash of nutmeg (optional)
1/2 + cup mozzarella or mixed cheese blend

Meatballs:
2 lbs ground hamburger
2 TBL bacon fat
1 cup onion
1 cup breadcrumbs
1 heaping spoon of parsley
1 TBL garlic salt
1 tsp beef bullion (low soduim)
2 eggs

* If you use a standard pie dish as I did, expect to have some leftover meatballs. You can half the meatball recipe if only making this dish.
