Made Beef Flautas with Pico de Gallo and Lime Crema for dinner!

Tonight, for dinner, I threw this simple dish together, and it was really filling and I had a ton of leftovers. Here's how!

Preheat your oven to 425 with the rack in the middle of the oven.

Here's what you'll need:

a lime, a roma tomato, an onion, sour cream, flour tortillas, 1 pound of ground beef or turkey, taco seasoning, and mexican cheese!

Lime Crema: zest a lime and mix the 1/2 the zest with 3 ounces of sour cream. Add a good size squeeze of lime juice into the sour cream and mix. Add 1 tablespoon of cold water to mixture, and keep small amounts of water until it becomes a consistency that you can drizzle. Add a dash of salt!

Pico De Gallo: Dice 1 roma tomato, add in 1 to 2 tablespoons of finely chopped onion, and the rest of your lime zest. Mix!

Beef Flautas: finely slice half an onion and fry in a drizzle of oil, until softened. Add 1 pound of ground hamburger(or turkey). Fry until beef is cooked. Add a packet of taco seasoning and the amount of water that is indicated on package. For your tortillas, line a cookie sheet with foil and spray with non stick cooking spray. Also, take a pastry brush and a couple tablespoons of olive oil and wipe each side of 6 taco size flour tortillas. Take the beef mixture and spoon into tortillas and sprinkle with cheese. Wrap tightly, and leave the seam side down, so they don't unwrap while baking! Now toss these babies in the oven for 15 minutes

Once they are nice and golden, serve with pico de gallo on top and drizzle with the lime crema! Super easy, super yummy. Enjoy!
