The Famous Spring Fling Cake

I finally got to try the legendary Spring Fling cake from Eternal Flavors Bakery in Denver. I was beginning to think this cake was an urban legend. I have been hearing about it for years described as, “the best cake EVER”. The first place to create this cake was at the Market in Larimer Square. After 42 years of business, they closed. Melchor Ocampo who was the head baker at the Market went on to open Eternal Flavors Bakery in May of last year. The Spring Fling is only made once a year, making this cake even more elusive. I was finally able to taste it in all of its glory. It is made with zucchini bread, a decadent, sweet cream cheese, and as you can see fresh fruit. The Spring Fling definitely ranks in my top 3 favorite cakes of all time.
