Oyster Rockefeller
This is for 12 oysters. Start by melting 2 Tbs. of butter. Then add in at least 2 Tbs. of minced garlic and 1/4 cup of shallots. Then add in 1 bag of frozen spinach or you can use fresh chopped spinach. Let that cook for around 8 minutes. Now you can add in either vermouth, herbsaint or pernod. 2 Tbs of that. Now your topping mix can be done in a pan or in a food processor. If your doing a food processor get a loaf of sourdough bread. let it get stale, cut it in chunks and make crumbs. If doing it in the pan, just use regular breadcrumbs. Need about 1/2 cup of bread crumbs. Either way add 2 Tbs of butter, 4 to 6 oz of parmesan cheese and 2 tsp of fresh parsley. Mix together. Now shuck your oysters. Get your grill up to temp. Put your oysters on the grill. Let them cook for several minutes before you put the spinach topping on then the breadcrumb/cheese topping on. Once the Cheese is slightly charred, and everything is bubbling they are done.
