Prime Rib By Cajun Rnewbbq Start off by tying up your prime rib with butchers' twine if the butcher did not do so. You want to make sure that the bone is nice and secure. Then take some olive oil and rub the meat down with it and put on some Uncle Steve's Smoke Bomb and Thick Meat Shake. Now time to get that smoker up to 250 degrees. I let it smoke till It hit 129 degrees. Pulled it and let it rest for 7 minutes under a piece of foil before slicing into it.
