Boudin Jalapeno Poppers By Cajun Rnewbbq Start off by cutting your jalapenos in half and getting all the veins and seeds out. Then time to make up the filling. Depending on how many you're making amonut of filling will vary. So you will need some shredded cheese. Your choice. Some cajun seasoning, I used Saints and Sinners Bayou Boggie. Then I took some boudin out of the casing and crumbled it up into the filling. Now time to stuff the jalapeno's and then wrap them in bacon. Once finished get your smoker up to 400 degrees then put them on the grill for 40 minutes. This will result in crispy bacon. Let them cool for 5 to 7 mins so they can firm up and you don't burn your mouth.
