Santa Maria Bbq - Skirt Steak Tacos on the Menu By Cajun Rnewbbq First go ahead and put your skirt steak in a bag with the Tapatio marinade. They said for 30 minutes, but I let it go for 2 hours. I wanted it to be well seasoned. While that's in the fridge, chop up your veggies. I did red onion and green bell pepper. You of course can do more or less or different. Thats the beauty of this. Next get you grill fired up with the santa maria attachment. Today I'm using oak wood. After the meat is done marinating, and the grill is up to temp, go ahead and put the meat and veggies on the grill. Adjust the height of the grate as the fire goes higher or lower. Pull the meat and veggies at your desired doneness.
