Beef Enchiladas By Cajun Rnewbbq Today we made up some Beef Enchiladas. First start off by browning off 2 lbs of ground meat. Use Saints and Sinner Brisket seasoning. Then time to make the enchiladas. Take a 9" x 13" baking dish and pour 1 can of red enchilada sauce all over the bottom of the dish. Then Start making the enchiladas. Take a Flour tortilla and a small scoop of the ground meat mix and put it inside and roll it up. Then put it in the dish. Keep doing this until the dish is full. Once full take some cheese and put a layer over the enchiladas. Then take another can of red enchilada sauce and pour over the cheese, then do another layer of cheese. Put them in the smoker at 300 degrees for 25 minutes. Then take them out let it cool for a few minutes, then eat em up.
