Red Robin California Chicken Burger
Now Don't get mad with me for calling it a burger if you call them chicken sandwiches. They call them burgers. 
First start with seasoning the chicken breast with a nice all purpose chicken bbq rub. Then put them on the smoker at 350 degrees for around 1 hour or until they hit 165 degrees. 
While this is happening go ahead and fry up your bacon to your desired level of doneness. 

Once all that is done Buid the burger. Lay down some Monterey Jack cheese, Lettuce, tomato, avocado and bacon. 

Copy-Cat Red Robin California Chicken Burger

Start off by getting your smoker up to 325 degrees. Then cut groves into your ham in a crosshatch pattern. Now put on your seasoning. I used Meat Church Honey Hog Rub and made sure it got into the groves. 
Now put it onto the smoker at 325 for 10 mins per pound. When it get to be 30 mins before being done, baste it with the hot honey sauce that's infused with chilies. You can find it online. Once done it will be ready to serve.

Double Smoked Hot Honey Ham

Start off by using a good all purpose rub and season all sides of the chicken.
Then make the sauce. 1/2 cup of ketchup, 2 Tbs. of mustard, 1 can of coke. Mix to combine.
Now on med. heat melt 2 Tbs. of butter and sauté 1 whole onion that you cut into slivers. You can season them if you want, I did. When they've cooked for 5 mins. Go ahead and put the chicken in. After 3 to 5 mins flip the chicken over. After another 5 mins. pour the sauce over everything. Cover and put on med. low for 45 mins. At 45 mins. uncover, stir, flip the chicken and turn the heat up to med. and cook for 10 to 15 mins to thicken up the sauce. Once the sauce is thickened, it is done. Cook some rice to go with it. 

Southern Classic Coca Cola Chicken

Start off with 1/4 cup of worcestershire sauce, 1/2 cup of brown sugar, 4 Tbs. of cajun seasoning, 2 Tbs. of Shitake mushroom powder, 4 Tbs of horseradish sauce, and as much Tabasco sauce as you can handle. Let marinate for minimum of 2 hrs. overnight is best. 
Then put it on the smoker with indirect fire. I'm using pecan wood chunks as smoke. 
Put the wings on the smoker and move them around and flip them over ever 15 minutes. After 45 minutes, sauce them with Tabasco Sweet and spicy sauce. At 1 hour to 1:15 depending on the wings they will be ready. 

Extra Hot & Spicy Wings

This is for 12 oysters. 
Start by melting 2 Tbs. of butter. Then add in at least 2 Tbs. of minced garlic and 1/4 cup of shallots.  Then add in 1 bag of frozen spinach or you can use fresh chopped spinach. Let that cook for around 8 minutes. Now you can add in either vermouth, herbsaint or pernod. 2 Tbs of that. 
Now your topping mix can be done in a pan or in a food processor. If your doing a food processor get a loaf of sourdough bread. let it get stale, cut it in chunks and make crumbs. If doing it in the pan, just use regular breadcrumbs.  Need about 1/2 cup of bread crumbs. Either way add 2 Tbs of butter, 4 to 6 oz of parmesan cheese and 2 tsp of fresh parsley.  Mix together.
 Now shuck your oysters. 
Get your grill up to temp. 
Put your oysters on the grill. Let them cook for several minutes before you put the spinach topping on then the breadcrumb/cheese topping on.  Once the Cheese is slightly charred, and everything is bubbling they are done.

Fried Whole Catfish

I bought my catfish from the store. They already had the heads, guts and skin removed. Now you can remove the fins, but they make for better presentation. Now get your seasoning batter. Today I'm using Bayou Marine Fish Fry. 
First roll the fish in the batter, then in the egg wash, then back into the batter. Make sure you get some batter inside the fish. 
While this is going on get your oil up to 350 degrees. Lower the fish into the oil and let it cook for around 8 minutes. Flip it over half way thru the time. Take it out and let it drain on a rack with paper towels. 

Fried Whole Catfish Perfect for Meatless Fridays

Start off with 2 32 oz boxes of seafood stock and pour that into a stock pot on high. 
Then add in the top and bottom of your 2 bell peppers, top and bottom of your yellow onion, some green onions, 3 stalks of celery cut up, and your 2 lbs of shrimp shells. Bring to a boil and let simmer for 45 minutes. After that strain it out and put to the side.
Get 6 Tbs of unsalted butter and put it in a pan on med. Let in melt for a minute before adding the 1/2 cup of flour. Now you stir for 7 to 10 minutes. till it reaches a nice nutty brown color. 
Once there add in 2 cups of bell peppers, 2 cups of onions, 2 Tbs of garlic minced, and 5 stalks of celery cubed. Now some Recipes Say add 1 can of diced tomatoes some don't. You do you.  Let it cook for 5 mins. 
Now add the seasoning. Add in 2 Tbs of celery seeds, 5 Tbs of cajun seasoning, 5 Bay Leaves, 1 tsp. of salt, 2 cups of stock. Bring to boil, then simmer for 45 mins.  Then add the shrimp and let cook for 5 to7 minutes on med heat. All done.

Hot & Spicy Chicken Fried Steak

Start off by getting your oil up to 350 degrees.  Now get yourself a couple of cups of flour in a bowl. Then add 3 to 4 Tbs. of Saints And Sinners BBQ Rub Comp. Blend Brisket Rub and their Sweet Heat.  Mix to combine.

Now in the Egg wash. I have 4 eggs beaten, add in as much of hot sauce you can handle. Im using Tabasco Family Reserve. 

Once the oil gets to 350 degrees. Take your perforated cube steak and dredge it in the flour mix, then in the egg wash, then back in the flour mix. 

Now slowly lower it into the oil.  Flip it over after 3 mins and cook an additional 3 to 4 mins.

Beef Totcho's - Nacho's Done a Different Way!

This is a real simple easy dish to make. Start off with putting your tots in a 425 degree oven or smoker for 20 minutes or as long as the package instructs you to.
As this is happening, brown off 1 to 2 lbs of ground meat. If you're cooking the whole bag of tots, you will need 2 lbs of ground meat. If you're only doing half the bag than just 1 lb.  Once browned off and drained of fat, put the taco seasoning in it and mix it in. 

Now get your dish and spay it so nothing sticks. Now put it the tots, then put the ground beef on top, then put on top the shredded cheese. 
But it in the smoker or the oven at 300 degrees at 10 mins to get the cheese all nice and melted. 
Once all done. Time to dress it up with what you want. Lettuce, tomatoes, salsa, whatever you want to put on it.

Full disclosure, I was sent this Bottle to try out along with several others of their lineup. This one has a kc flavor with the molasses. 
Now on these ribs I scored the back membrane, didn't use a binder and used Uncle Steve's Competition Pig Shake. 
Put it on the smoker at 250 degreese. Let that go for 2 hours. Every hour I poured apple juice on the ribs to moisten them. 
At 2 hours I pulled the ribs an wrapped them in foil with butter, brown sugar and apple juice on both sides of the ribs. Put the ribs back on the smoker for 90 minutes.
At that I unwrapped them, take them out the foil and put on the sauce. Put the ribs back on the smoker for 30 minutes. After that the Ribs are done.

New Orleans Shrimp Boil By Cajun Rnewbbq

Start off by cutting your celery ribs into halfs. Cut the bottoms off the garlic. Cut the onions in half and some into quarters. Cut some lemons in half and some into rounds. Also cut your sausage into 4" pieces. 
Now get your water up to a rolling boil. Then add in your Crawfish/shrimp/crab boil powder (season to taste), Liquid boil (season to taste) and the seasoning packet. Let that go for about 5 minutes, then taste the water and add seasoning if you desire and retest.
Once satisfied add in the veggies. Let that go for 5 mins.
Then put in the sausage, corn and red potato's. (you can add mushrooms, too). Let that got for10 -15 mins. Now you can add in a bottle of hot sauce if you want like I did. 
Now time to add in the shrimp. Let that boil for 3 mins. Then turn off the heat and put in a bag of ice to cool it down. Let that soak for 5-20 mins. All depends on how hot you want them. Then time to eat.

Now Were not useing that can stuff. Were doing everything homemade. Start off with a little oil in the pan and put in a 1/4 of an onion diced and half of a bell pepper diced. Let at sweat for a few minutes. Then add the ground beef and brown it off. Then add 1 can of rotel with green chilies and 8oz of tomato sauce and 2 to 3 Tbs. of Uncle Steves Lucky Shake and mix it together. Then add in half a bottle of Bbq sauce and 1/4 of a cup of bourbon. Mix it all together and then let it simmer till it comes together. IT may take about 20 minutes. Once it thickens add in 6oz or 8oz of shredded cheese.  Mix it all together and you're all done. Get some buns and eat.

Chicken BBQ Spaghetti

Start off with a whole chicken and put on Saints and Sinners Competiton Chicken Rub and their Sweet Heat. Now get your grill or smoker up to 350 degrees and put the chicken on it till it reaches 165 degrees in the breast.
While this is happening boil a pack of spaghetti to the package directions or your desired doneness. 
After the chicken is done, shred it up and set it aside. 
Now in the pot with the spaghetti put in a 8 oz can of tomato sauce, 1 can of rotel, 1 half of a white onion diced, 4 cloves of garilc diced.
SPICE LIST:
1tsp garlic powder
1tsp onion powder
1tsp paprika
1tsp salt
1tsp pepper
1 tsp oregano (i used the powder version)
1 tsp basil (i used the powder version)
1 tsp of parsley
1/4 tsp of cayenne powder
1/4 tsp cumin

Then put in the chicken, and half a bottle of bbq sauce and mix it up. 
Now transfer it to a a 9x13 dish that been sprayed. 
Put it on the grill ( indirect) or oven at 300 degrees for 30 minutes. 

Chicken BBQ Spaghetti

Rum Baked Beans

Start off by frying up some bacon and chopping it up. 
Then in a Dutch oven pour in 2 can of kidney bean (drained). 
Then add the bacon, 1 cup of ketchup, 1/2 cup of yellow mustard, 1TBS. of vinegar, 2 TBS. Uncle Steve's South Texas Red, 1 cup of brown sugar, 1 tsp of ground mustard, and 1/4 cup of dark rum. 
Stir to combine.
Put on smoker at 300 degrees and let it go for several hours. I let mine go for 4 hours. to really meld. If you want it sooner by all means pull it off when you want.

Start off by putting on some Kosmos Q dirty Bird all over the wings and letting them rest while you get the grill up to temp at 350 degrees. 
Next fry off some bacon and crumble it up into a tiny of pieces as possible. I cooked 5 strips for 25 wings. If you want more bacon or less feel free to adjust. 
Now every 15 minutes rotate the wings so they cook evenly.

Time for your Bacon Maple Sauce:
Half a stick of butter melted
Add the bacon crumble
Then add in 1 cup of Dr. Bills Maple Cane's Syrup or any real maple syrup.

After 45 minutes coat each wing in the sauce and return to the grill for 15 minutes. They will be done.

Cajun Crab Crisp

Start off with some crab meat, Lump is preferred but claw is fine. Then add in half a stick of butter melted (I used Kerry gold herd and butter), 1 tablespoon of mayo, some cajun seasoning. I used Saints and Sinners cajun blend some hot sauce, and some shredded cheese. Mix all together and put it on some english muffin halfs. Then put on your smoker or oven at 350 degrees for 15 - 20 minutes. Great apps for parties or for meals.

Start off by tying up your prime rib with butchers' twine if the butcher did not do so. You want to make sure that the bone is nice and secure.  Then take some olive oil and rub the meat down with it and put on some Uncle Steve's Smoke Bomb and Thick Meat Shake. 
Now time to get that smoker up to 250 degrees. I let it smoke till It hit 129 degrees. Pulled it and let it rest for 7 minutes under a piece of foil before slicing into it.

Texas Style Franklin BBQ Chicken Wings By Cajun Rnewbbq

Start off by spraying your wings with spray butter. 1. it helps the seasoning to stick. 2. it crisp up the skin. 
Then coat the wings in a seasoning mix of 1 part  kosher salt and 2 part course ground pepper. 

Now get your smoker set to 350 degrees and put them on the grill. I smoked them with oak wood.  Turn them over every 15 minutes. At 45 minutes in go ahead and start brushing on Franklin BBQ's sauce. Any of his variety will do. Repeat after 10 minutes on the other side. 10 minutes later they are done.

Start off By browning off 1 pound of Alligator meat.  Then add in 1 diced bell pepper, 1 diced med. onion, and 2 diced ribs of celery. Let them sweat in for a couple minutes. Then add in some cajun seasoning (to taste), 1 Tbs. of basil, and red pepper flakes (to taste). Let that go for a min before adding 1 can of tomato paste and 1 can of rotel.  Then add in 4 cups of water. Cover it and let it cook for 2 - 2.5 hours. Stir occasionally. Make yourself some rice and you're all set.

Start off by finding the eye of the oyster, it looks like a coin slot on most of them and insert the oyster knife and pry the top shell off the oyster. Then take the knife and remove the oyster from the bottom shell, but leave it in the bottom shell. Now get your grill going. I used my charcoal grill for this one, but you can use gas if you want. 
Move on to cutting up the jalapenos. Cut them in half, remove the veins and seeds and dice them up.
Time to make up the butter sauce. 
Melt 1 stick of butter
add 1 Tbs. of minced garlic
2 Tbs. of cajun seasoning

Put the oyster on the grill in a circle, leaving space for flame ups. After a fer seconds, pour some butter sauce on each one. Once they start to bubble, add the cheese and jalapenos. Once the cheese melts its time to pull them off the grill.
