(Denver, Colo) Proving that ramen shouldn’t be relegated to winter months, Chef Jeff Osaka rotates seasonal bowls on his menu at Osaka Ramen, a RiNo restaurant.
In summer months, Osaka Ramen (2611 Walnut St.) serves bowls of corn ramen made with Olathe Sweet Corn, salted butter, pork shoulder and sesame-miso broth. Come fall, it’s all about green chili with chorizo ramen, with shaved cabbage taming the heat and a poached egg on top.
But Osaka has added a new limited-time dish to his spring menu: A crispy and salty chicken and waffles ramen. The surprise hit is made with crispy fried chicken skins, waffle fries, bacon-collard greens, yuzu garlic aioli, chicken-demi glace, negi, chicken broth and a soft egg.
"This seasonal special is an ode to my hometown (LA) where you can find some pretty great chicken 'n waffle joints,” Osaka told NewsBreak. “Taking the best of both worlds with the chicken and its crispy skin, and adding a play on the waffle with waffle style chips.”
The chicken and waffles ramen will be on the menu until early July before it's replaced with sweet corn ramen.
Try syncing up a bowl of ramen with the chilled green beans topped with a shoyu-sesame dressing and sesame seeds, an original recipe from the chef’s mom.
