(Denver, Colo) Denver International Airport is about to become the best place in Colorado to do a food crawl.

Denver International Airport has slowly been debuting new restaurants during the past year. Beloved breakfast spot Snooze, an A.M. eatery opened in Concourse B, slinging pre-flight flights of pancakes. Shake Shack also expanded its Colorado reach, serving burgers and boozy milkshakes from an outpost on United’s Concourse B.

But now, the airport announced plans to open more than three dozen restaurants over the next two years, the most extensive concessions development since the airport opened in 1995. Many restaurants and bars will be familiar to Denverites, including a sister eatery to Alex Seidel’s Union Station farm-to-table Mercantile Dining & Provision and an airport version of Williams & Graham, an upscale bar modeled after the sister speakeasy in LoHi. The Bindery, a LoHi restaurant with an eclectic menu, will open a second location in DIA in 2023 catering to cosmopolitan travelers. Chef-owner Linda Hampsten Fox curates menus by drawing inspiration from places she’s lived or spent extensive time, including Italy, France, and the islands of Elba and Sardegna.

All-day empanadas from Maria Empanada, New York-style bagels from Rosenberg’s Bagels, ramen from Uncle, and Indian tacos from Tocabe are also coming soon.
