Omakase restaurant Sushi By Bou opens in West Palm Beach

A modern, speakeasy-inspired omakase concept with locations in Fort Lauderdale and Miami has opened its third South Florida location in West Palm Beach.

Sushi By Bou — best known for reimagining the traditional omakase experience — has opened an intimate, 12-seat omakase counter at 40 West Clematis Street inside the Vinyl Fish Club.

The hospitality group behind the concept, Simple Venue founders Michael Sinensky and Erika London, recently partners with newly-appointed chief hospitality officer and nightlife expert Richie Romero to open the new location.

Moving forward, the trio say their goal is to open at least a dozen Sushi By Bou locations in 2023, including several across Palm Beach County.

The Simple Venue hospitality brand is known for bringing micro-restaurant concepts to underutilized spaces located within existing venues. Its flagship brand Sushi By Bou changed the sushi counter experience in America by offering a modern take on the classic old-school sushi counter, providing a glimpse at the hustle and bustle of Japan's food culture, combined with a unique and personalized culinary experience.

As part of the bespoke speakeasy dining experience with Sushi By Bou, each location has a customized theme to offer a unique new memorable guest experience. The West Palm Beach location features color palettes of pinks, greens, blues, and heavy floral patterns inspired by Palm Beach County.

When dining at Sushi by Bou, seasoned sushi chefs will expertly guide guests through a timed omakase experience. Guests are invited to sit back and let the chefs decide their menu and unique libations.

The West Palm Beach menu restaurant's menu highlights high-end cuts of fish and other ingredients including Hamachi (yellowtail), Botan Ebi (spotted prawn), Ikura (salmon roe), Hotate (scallop), O-Toro (fatty tuna), Unagi (bbq eel), and its signature Wagyuni (a 'surf and turf' that marries wagyu and uni).

Hand rolls and other sushi offerings that utilize only the freshest highest-quality fish sourced locally and globally are available upon request, along with additional a la carte specialties, and seasonal mochi ice cream for dessert.  

Seating for each Sushi By Bou experience is priced at $60 per person for a 12-course omakase, and $125 per person for a 17-course omakase. Reservations can be made online at sushibybou.com or Opentable.

Hours of operation are Tuesday through Sunday from 5 p.m. to 12 a.m. Seating times are 5 p.m., 6:15 p.m., 7:30 p.m., 8:45 p.m., and 10 p.m. (with the addition of 11:15 p.m. on Friday and Saturday). Each seating is 60 minutes.
