The Rogue Panda, a new plant-based Chinese restaurant concept, has arrived at TimeOut Market Miami.
Marrying regional Chinese favorites with a plant-based menu, The Rogue Panda is on a mission to save the planet, one insanely delicious meal at a time.
The team behind The Rogue Panda, entrepreneurs Michael Laverty and George Ruan, knows that protecting the planet from climate change means reducing the world’s dependence on food from animal agriculture and replacing this with sustainable fare.
But — especially as food lovers — the idea of giving up on so many of the diverse, mouth-watering dishes of the world, many of which rely on meat made from animals, felt incomprehensible.
They arrived at the question: could it be possible for the food they love to be delicious and good for the planet? The Rogue Panda’s answer is a resounding, "YES!"
By serving a menu that does not compromise on flavor and craveability, The Rogue Panda is showing that sustainable, plant-based eating can be, at times, even tastier than eating food with meat derived from animals.
Convincing millions of people to embrace that idea was another story, however. To do so, the duo decided to launch The Rogue Panda, their way to make it easy for everyone interested in transitioning to more plant-based fare.
A self-described serial entrepreneur, Laverty grew up in the restaurant industry — first as a toddler eating cherries at the bar of his dad’s restaurant, then over a decade of work between front of house, back of house and restaurant management.
Ruan is a tech entrepreneur and investor, who grew up on his mom’s cooking, dishes rooted in the culture and spices of the Sichuan region. Together, the two friends are bringing their creativity and curiosity to solve for sustainable and delicious solution to a restaurant that doesn't rely on meat-based entrees and offerings.

The Rogue Panda’s menu embraces Miami’s culture of fusion and is inspired by both regional Chinese favorites and classic Chinese American dishes. Tien Ho and Josh Cameron, alumni of Momofuku and Eleven Madison Park, designed the menu with a goal of creating dishes that all eaters will love.
Executive chef Nelson Maldonado, a Miami native and seasoned chef with experience in fine dining, corporate dining, and scaled, multi-unit operations, is now bringing this menu to life, with the launch of The Rogue Panda’s first location in Miami.
Menu highlights include Slippery Dumplings, with Napa cabbage, Impossible Pork, and pickled daikon, and topped with spicy Sichuan sauce; Dan Dan Noodles, a Sichuan street noodle, with Impossible Pork ragu, bok choy and onion crisps; Kung Pao Brussels, with crispy Brussels sprouts, peanuts, scallions and Kung Pao sauce; and Rogue “Egg” Roll, with Shiitake mushrooms, pickled veg and served with sweet chili sauce.
