Chef Henry Hané, owner and executive chef of B Bistro + Bakery, will bring a dynamic culinary experience to Miami later this fall.
The restaurant, known Jattö, will be located at located at 223 NW 23rd St., in the former iconic Wynwood Alter location, and is set to open in late October 2021. According to Hané, the name is based on the Peruvian word “jato,” meaning “home.” For the chef, home will be the stage where his menu draws inspiration from all over the globe, from Thailand, Peru, and Cuba to Italy and beyond.
While ingredients will be locally sourced, dishes will be executed using innovative techniques. Jattö will also bring together a variety of Miami based purveyors, farms and spirit companies under one roof.
"Jattö will be a new home or the community. While the menu features many global inspirations, I am especially excited to draw influence from my Peruvian background," said Hane. "We will also collaborate with local partners George Stone Crab, Frice Ice Cream, Zak the Baker and Coconut Cartel (to name a few). Every small business makes this city so magical and we are proud to welcome them in our home."
The chef is notorious for his positions at Eating House, B Bistro + Bakery, Bebito's Cafe and worked at Two Michelin Star, Le Manoir Aux Quat Saisons and the molecular gastronomy mecca at Two Michelin Star Miramar in Llanca, Spain. He will utilize his muti-sensory culinary skills to execute the avant-garde fare at Jattö. Accompanying him in the kitchen will be his Chef de Cuisine, Aleric Constantin (aka: @TheCyclingChef). The duo will be reunited after working together at B Bistro + Bakery.
For opening month, Jattö will offer dinner with weekend brunch soon to follow. Dishes will be crafted to share featuring small plates ranging from $12-$22 and larger dishes range from $65-$85 (recommended for 2-3 people). Menu highlights include Zak the Baker Bread topped with colada butter, Stone Crab Causa – George Stone Crab, acevichado sauce, avocado, egg yolk fudge, choclo chalacita, Mr. Benedict – soft egg, hollandaise, crispy bacon, panela and tamarind gel, smoked paprika dust, Leek Confit – cashew cream romseco, leek ash, Huancaina Chicken – canary beans, quinoa and criolla slaw and Affogato Colada – Frice sorbet, condensed milk foam, colada syrup.
This culinary oasis acts as a multidimensional space boasting a sleek indoor dining room, an intimate chef’s table and a lush al fresco dining patio featuring an exotic cocktail bar. Jattö has transformed the space into a vibrant culinary playground featuring hues of rich green colors throughout. Guests will be invited to dine indoors, outdoors, or at the intimate chef’s table granting front row seats into the kitchen.
Cocktails will include spin on the classics like a Pisco Sour infused with passionfruit, chipotle and hibiscus and craft cocktails including a Cartel Negroni made with Coconut Cartel Rum, koji cured banana infused sweet vermouth and coconut washed Campari, Café Frio prepared with Cincoro Tequila, café de olla syrup, Aztec chocolate, orange, smoked chile and topped with a salted coconut foam (drinks will start at $15). Natural wines and a selection of local beer will also be available.
Jattö is located at 223 NW 23rd St, Miami, FL 33127. Jattö will open for dinner from 6 p.m. to 11:30 p.m. Monday through Friday, with late night drinks available at the bar on weekends.
