Recipe: Broccoli lemon rice

BY's Recipe: Broccoli lemon rice meal is simple to make and requires no cooking experience. It can work for vegans and kids who do not like to eat steamed broccoli.

Servings: 6. Prep. Time: 20-25 minutes. Cook Time: 25-30 minutes. Total Cooking Time: 45-55 minutes.

What you need

  • Stove or Microwave,
  • Blender or kitchen knife,
  • 45-55 minutes.

Required Ingredients

  • 2 cups of white or brown rice,
  • A pound of washed and cleaned broccoli,
  • I tablespoon of lemon juice.

Optional Ingredients

  • Salt or sugar to taste,
  • 1 teaspoon of extra virgin oil,
  • 1/2 a teaspoon of Knorr or turmeric powder and black pepper,
  • Chopped onions.

Directions

Step 1.

  • Use a medium-sized pot,
  • Add rice and 3 cups of water,
  • Parboil rice for about three minutes.

Step 2.

  • Chop broccoli,
  • Blend the broccoli with a cup of water and set it aside ( see photo below).

Step 3.

  • Drain water from the rice,
  • Add blended broccoli, salt, lemon juice, turmeric powder, and black pepper,
  • Stir for a few seconds and cook until it dries,
  • Lower the heat and slow cook for a few minutes,
  • Your meal is ready (see photo below).

Serve with baked Mushroom, or beef, or chicken.

Microwave

  1. Use a microwave-friendly bowl,
  2. Follow steps 1 and 2 above,
  3. Add all the ingredients and stir for a minute,
  4. Cover the bowl and cook until the water dries,
  5. Add oil and stir for a few seconds,
  6. Cover the pot and cook for a few minutes,
  7. Your meal is ready.

You can substitute broccoli with any vegetable of your choice.
