Eggplant salad with salted eggs
A very simple salad with one of my favorite vegetables - eggplant. I just broiled the eggplant, punctured them first with a fork so they don't burst in the oven, then I peeled off the skin. Some chopped tomatoes, diced red onion and red onion were added on top, a drizzle of vinegar, and then salted egg.
