Last weekend's BBQ leftover turned into a nutritious, comforting and tasty Monday lunch. The leftover, chicken kabob, saffron rice, bell pepper and tomatoes cooked with freshly picked vegetables from the backyard garden, scrambled eggs and chicken broth.
