Best Chicken and Potatoes | ASMR Cooking | Campfire Cooking Cast Iron

Chop your potatoes into small pieces, from about 1/2 inch to 1 inch in diameter. Dice onion. Slice sweet peppers. De-seed and slice jalapeno pepper. Mince garlic. Add all ingredients to the cast iron skillet. Add olive oil, salt, and pepper. Place over the fire. Stir occasionally. Cook until golden and crispy. Put the juice of half a lime, a drizzle of olive oil, and minced garlic into a ziploc bag. Season chicken breast with Mrs. Dash Southwest Chipotle seasoning, salt, and pepper and place in Ziploc bag. (This can be done ahead of time to let the chicken marinate). Cook the chicken on a rack over the coals until cooked through.
