Fast-Casual Bowl Concept by the Son of Outback Steakhouse Founder opens his 18th Location in Brandon!
Bolay Fresh Bold Kitchen is a build-your-own ‘Bol’ restaurant taking a customizable and modern approach to dining. Created by Chris Gannon, the son of Outback Steakhouse Co-Founder Tim Gannon, Bolay is dedicated to providing all the quality and excellence of modern dining through the convenience of a fast-casual concept.
Through his years of being a student of business and cultures traveling the world and tasting international cuisine from professional’s kitchens and friendly homes, Gannon knows what makes great flavors.
Bolay was created as more than just another fast-casual restaurant. It was born from the belief that the “fast” and the “casual” can be extraordinary and nutritious. The “Bolay Way” is one that is meant to invite and inspire. Their culture is one with a heavy focus on community, health, fitness, passion, flavor, and service.
Bolay boasts an offering of pre-composed ‘Bols’ as well as endless opportunities for customization across their chef-driven menu along with gluten-free, vegan, and vegetarian options.
Guests build their own ‘Bols’ starting with bases such as forbidden black rice and cilantro noodles, topped with veggies featuring options like ginger broccoli, herb roasted potatoes, and balsamic mushrooms.
Proteins come next with something for everyone like juicy steak au jus, savory miso-glazed tofu, and spicy Thai shrimp for a bit of heat, then each bol is finished with add-ons like fresh cilantro and parmesan cheese followed by signature sauces such as creamy garlic and herb, cilantro pesto and spicy Thai sauce.
Guests can also find juices, teas, agua frescas, and desserts to complement their meal.
Tampa Bay Debut
Bolay Kitchen first launched in 2016 in Wellington, Florida. On May 13th the fast-casual concept will open its 18th restaurant in five years in Brandon, Florida.
“I’m extremely grateful for the opportunity to introduce our fresh, bold flavors to the Tampa Bay Area, starting first here in Brandon,” said Guillermo Novoa, operating partner of the newest Bolay Fresh Bold Kitchen. “At Bolay, we don’t want to just be another restaurant on the block. Our goal is to become a hub for inspiration, personal growth and development; encouraging our team and guests within the local community to be the best versions of themselves. I personally love how eating at Bolay makes me feel and I can’t wait to share that passion with our guests.”
The new Brandon location at 1544 w Brandon Blvd. will allow for indoor and patio seating for a total of nearly 70 guests. Dine-in, curbside pickup, and direct delivery will be available, along with catering and Family Meal options.

- Guests must wear lanyards they receive at the check-in while in line.
