This video is an aerial view of one of our favorite camping spots, Riverwalk RV Park.  Riverwalk RV Park is located on the Yadkin River in Jonesville, NC.  It is the perfect location for a lovely quiet weekend if that's what you seek or a fun-filled adventure.  At Riverwalk, you come as a guest and leave as a friend!!

These TWO recipes are easy and delicious. Enjoy!!
VEGGIE SUCCOTASH WITH SALMON
1 med. diced pepper (any color)
1 med. onion, diced
2 stalks celery, diced
1 lg. sweet potato, cubed
1 cup fire roasted tomatoes
1 15-oz can black-eyed peas, rinsed
1 cup chopped kale or spinach
1/2 cup kernel corn
1/2 cup sliced okra (fresh or frozen)
1 8oz. Chicken broth
1 Tbsp olive oil
SEASONINGS:
1/4 tsp Thyme
1 tsp Creole seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp ground pepper
1/4 tsp salt
Add oil to large pan, sauté onions, peppers & celery.  Add seasonings, broth, sweet potatoes and tomatoes.  Bring to simmer, stirring occasionally until potatoes are soft.  Add black-eyed peas, corn, okra and greens.  Simmer until veggies are tender.  Serve over rice or eat as a soup!!  
HOMEMADE BONE BROTH IN INSTANT POT
Use a variety of beef bones, chicken pieces and other collagen/marrow bones.  2 Tbsp ACV, carrots, celery, onion, 1 bay leaf and spices.
